Ribela Bágoas na Choiva
Ribela • Spain
Roughly translated to “Tears in the rain”, Bágoas na Choiva is a traditional Spanish cider made in the German Apfelwine style, with no carbonation or sulfites added. It features a selection of Ribela’s best apples, grown organically, picked at the optimum point of maturity and allowed to ferment spontaneously, using their own natural yeast. The resulting cider is then rested for one year in their underground cellar. After a natural filtration process, the result is a straw coloured, still cider with a noticable apple aroma, to be enjoyed as an aperitif or as a perfect accompaniment to fish or shellfish . Should be served very cold in a wine glass.
