“Our newest expression in the realm of American Sour Beer is a blend of dark beers aged and soured in oak barrels in the CBC Barrel Cellar along with young, fresh beer fermented in stainless steel tanks. A careful balance of fresh, clean maltiness, aged complexity, controlled oxidation, and soft, natural lactic acidity plays across the palate. Very subtle oak character, hints of wild fermentation, and a smooth, velvety final roastiness all play in the finish of this beer. At once both pleasantly tart and very drinkable, it expresses great depths of almost labyrinthine complexity and intensity.”
