Panil Barriquée Riserva
Birrificio Torrechiara (Panil) • Italy
The Panil beers are the only all-natural, traditionally-made true Sour Reds you will find today, and they comes from, of all places, Italy.
Just like the Barriquée, the Riserva is ‘triple-fermented.’ Primary fermentation takes place in stainless steel. What sets the Riserva apart is the next step: fifteen months spent in cognac barrels from Bordeaux, compared to the Barriquée’s three. This adds an elegant wine-like quality and a dry, oaky character to the deep, earthy, sourness that the Barriquée is known for.
The vintage is from 2008, and because it is unfiltered and unpastuerized, it will continue to ferment and mature with age. It’s a limited batch, and the live yeast in the beer make each bottle completely unique.
