Weizenbier is an outsider (or “Pimock”) in Cologne, as any Bavarian would be. But there is a Rhineland slant to this wheat beer-a Kölsch yeast replaces the traditional weizen one, and an unusually heavy dose of hops is added, resulting in a drier Weisse, with none of the typical banana and clove notes typical of a Bavarian wheat beer.
