The Benedictine monks’appreciation and use of hops strongly influenced the decision to include them as the only bittering ingredient allowed under the Bavarian Beer Purity Law of 1516. The elegance and subtlety of local hop varieties (known to the rest of the world as “Noble Hops”) is a feature of the classic German pilsner. This extra-hoppy “Zwickel”, or unfiltered pils, is brewed with lots of local Hersbrucker hops and Weissenohe’s own well-water, to create the perfect German beer- full, round, but exquisitely dry in the finish.
